This year we received a visit of Ivone and Edmar Zuccon from Santa Clara Farm, located in Brejereba, a region known as the Mountains of Espirito Santo, famous for the production of special coffees and microlots with high scores. Edmar and Ivone had the opportunity to make a commented tasting of their microlots for Lucca's invited guests. The experience was very gratifying, as both the customers discovered the quality of the coffee as well as the producer got to know his final customer better.
The Espirito Santo Mountains have altitudes ranging from 900 to 1,000 m altitude. The region is bumpy, allowing only manual harvesting. The nights are cold, inducing a late maturation, favoring the complexity of flavors and the concentration of the sweetness of the coffees.
The Zuccon Family has more than 25 years of tradition in the production of coffees. The farm has 220 acres with one million feet of coffee. Edmar achieves high productivity and very high quality in his lots, with the application of cultivation and processing techniques adapted to the conditions of the region. With great perspicacity, he found the natural vocation of varieties and processing for the place. Edmar developed the double fermentation. The first one, soon after the harvest, induces the appearance of very particular aromas and flavors, and the second for the pulp.
